Retronasal Olfaction
Most of what is called taste is smell arriving at the receptors from the back of the mouth.
Retronasal olfaction is the perception of odour molecules that reach the olfactory epithelium from inside the mouth, travelling up through the nasopharynx, rather than from outside through the nostrils. The latter route is orthonasal. Both stimulate the same receptors, yet the route alone changes the percept substantially.
Taste proper is the small set of qualities transduced on the tongue — sweet, salty, sour, bitter, umami, arguably fat. Everything else in what is loosely called taste is retronasal smell, which is why food goes flat during a head cold and why pinching the nose while chewing removes most of a flavour. The brain refers the sensation to the mouth, so it feels like taste; that referral is a perceptual attribution, not anatomy. Chemesthesis is a third channel, carried by trigeminal fibres rather than chemical senses — the burn of capsaicin, the cool of menthol, the prickle of carbonation are Nociception and related somatosensation, not taste.
The route difference explains a familiar disappointment. Coffee grounds, cut grass, jasmine and petrichor are built from volatiles that behave well in air but not in the mouth: some never enter the retronasal stream in quantity, some are lost to chewing and saliva, some carry a mouth-side profile nothing like their headspace. Aroma vocabularies fail here too, since odour is poorly lexicalised in most languages — a standing example in Linguistic Relativity and a hard case for both Prototype Theory and any flavour Taxonomy.
Regulation splits along the same seam: a compound may be approved as a fragrance yet not permitted as a food additive, because inhaled and ingested exposure differ in dose, route and clearance — the domain of Xenobiotic Metabolism.
